Exhaust Fans (rooftop) were left in the off position, which caused the Back of House to become very smoky when the HOH team started firing everything up, fryers, grills, etc... Additionally, the back wall (under the hood vents) was left dirty and greasy.
Paul works with our staff very well and that is much appreciated. He also communicates which is needed to grant him access to our buildings. Paul gets an +A in my book.
Standing dirty was from Front counter to the lobby doors
It appears the cleaning crew last night pulled out the fryers a bit too far unplugging them and killing all of our pilot lights. Given the age of these things it has made our open today quite a bit more difficult.
