Found the Ice Machine unit apart with the water fill valve missing. The drain is also apart with the waterline stuck down it. Need one000009120 water in let valve kit. Can't test further until the water valve is installed. Need to clean at that time too. 6/30/20 Replaced the water fill valve in the machine. Had to retrofit the valve into the machine. Ran ice machine cleaner thru the unit. Did wipe the inside down. Noted that this unit is very dirty and you can spend all day soaking and scraping the different parts to try to get the lime off them. When tested the unit makes ice but it is sticking to the evaporator and not sliding into the bin. Tried adjusting the level of the machine. Tried bigger cubes etc. but nothing worked Can try several things which may or may not work. Believe it is in the customers best interest to replace the machine. Will quote new evap. coil. Left the unit on. Will quote additional repairs and replacing the unit. Closing out this work order.

Removed and replaced Kettle pressure relief and low water cut off, unable to test at this time, everything in panel is wet, left main breaker off and taped a note to control, advising them not to attempt to operate until Monday morning - also verbal to Peter and some staff members.

customer stated Dishwasher unit occasionally says motor jammed but when they retry it it works. examined unit. cleaned and lubricated rack armature. also cleaned motor speed sensor and ring. reassembled and tested. ran unit. no problems at this time.

Removed and installed (in Culinary Building) 8 hoses, 8 quick disconnects, 8 shut offs and 4 regulators Note: also used 2 Robert shaw thermocouple 1 36 1 18. 2 Robert shaw pilot assembly. Range facing back wall had 1 pilot that would not stay lit. Billing for 1 regulator, thermocouples and pilot assembly and additional labor will be billed separately on wo# 178079 (not part of this work order).

Disassembled and replaced the condensate box assembly on Vulcan steamer, drain dual water valve, relief valve, and the compartment drain hoses. Tested and found the condenser thermostat not coming closed and the top steam valve buzzes and does not closes 100% at times. Will close out quoted w/o and require one 00855607-00001 condenser thermostat and one 857443-00001 upper compartment steam valve. Note: will quote additional repairs, closing out this work order.

Assuming all Dishwasher gauges are bad, pressure going Into booster says 0psi, coming out says 50psi but also 170F, final rinse pressure on unit says 5psi. Unit takes 30-45 minutes to fill. Prewash temp is around 140, wash is 177 at idle, after running a while can get down to 148. final rinse is always 185-196. Wash pump seal is leaking bad. Took apart final rinse solenoid, full of debris, cleaned and reassembled. 35psi at washer now and can't lower. Note: quoting additional repairs, closing out this work order.

bottom Combi Oven giving problems, found water lines run from top to bottom oven going through side panel and side shield. Advised customer to move plumbing before I took pictures. 12-18-18 examined unit, Chris says gas reset button will consistently trip 3 to 4 times a week. checked error log only 1 in 5 years an e94 communication error removed and cleaned all connectors between boards, started and ran unit, no problems, ran steam and heat - called Rodger at Alto Shaam, confirmed gas pressures okay. Ignitor should be 9ma measured 5to7 sometimes lower, will order ignitor and gaskets. 1-16-19 removed and replaced ignitor unit, would not fire up (too short) cleaned carbon from old and reused, now getting 9 ma, turned unit on and tested, all okay.

Examined Fryer unit. Installed a new thermostat and hi limit. Could not test at this time, No oil in vat.

removed bottom cover and control panel of Convection Oven. Oven lit right up and went to set temp,but would not relight to main flame when thermostat called for heat. Checked for spark which it had .Found solenoid to gas valve not opening , Checked for voltage to solenoid and it had 24v. Reconnected wires to solenoid and tapped it and oven lit but once again would not relight when thermostat called for heat.Needs new gas valve for bottom right hand oven gas valve part # 00-959662--00001 propane 9-4-18 Disassembled and replaced the gas valve. Reassembled and leak tested using leak detection solution. Tested for operation.

Disassembled and cleaned and sanitized the ice machine. Cleaned the condenser coil. Reassembled and allowed the unit to make ice. Discarded the first batch.
