At location to perform preventative maintenance on all cooking equipment in main kitchen and all satellite kitchens. At each piece of equipment I checked over all functions and made proper adjustments to equipment as needed I checked all unit for gas leaks were applied and wire connections and cord and plugs. At Garland range in main kitchen model H288 serial 40461. I found from left open burner with a weak flame. I removed burner and cleaned all holes. I still found weak flame do to valve not letting the proper amount of gas to burner with proper manifold pressure. I will order part with approval. At Southbend convection oven model BGS/13SC serial 18A79749 I found when temperature is set at 300 degrees it consistently under temped by 18 degrees and at higher temperatures settings it would over temp by 20 degrees. I will order new temperature probe with approval. At Wittco warming cabinet model 132-15-BC DD serial IW719612 I found unit heating well but mechanical temperature dial not
